New Beginnings Family Academy, along with friends at Whole Foods Market and funder Whole Kids Foundation, have teamed up to share some delicious recipes that promote nutrition, wellness, and fun collaboration in the kitchen.
“We hope you enjoy trying these monthly recipes that support healthy eating,” said NBFA Director and CEO Ronelle Swagerty. “This is a great way for friends and family to make smart food choices together.”
This month, NBFA is happy to share a recipe for the Grilled Cheese and Greens!
Whole Foods Market Grilled Cheese and Greens
There’s nothing better on a chilly day than a delicious grilled cheese, and this recipe is even better with some extra greens to go with it.
Start by heating one teaspoon of olive oil in a large skillet over medium-high heat. Then, add kale and stir until it begins to wilt and very soft. From there, arrange the sandwiches with cheese and the kale in the middle and toast until both sides of the sandwich are golden brown.

Tips From Chef Todd
Each month, NBFA Chef and Food Service Supervisor Todd Daigle will provide healthy tips on the recipe to give more options for taste or dietary restrictions.
Don’t Have Kale in the Fridge? Swap out the kale for another leafy vegetable, including baby spinach or arugula.
Try a Different Cheese American cheese works well in a grilled cheese, but you can also try a Colby Jack or Provolone cheese to add flavor.
