New Beginnings Family Academy, along with friends at Whole Foods Market and funder Whole Kids Foundation, have teamed up to share some delicious recipes that promote nutrition, wellness, and fun collaboration in the kitchen.

Looking for a quick and delicious meal to keep you warm on a crisp autumn day? NBFA is happy to share a recipe for Classic Butternut Squash Soup! 

 

Whole Foods Market Classic Butternut Squash Soup Recipe 

 

The soup is a traditional classic that is sure to please everyone. The soup is also dairy-free, high in fiber, and sugar-conscious. 

 

Start by heating a large pot over medium heat, add your vegetables, bring the pot to a boil, then reduce to low heat and allow the soup to simmer for about 30 minutes. For the full recipe, click here.

  • Try a Different Herb - A good substitute for fresh thyme is dried oregano or dried marjoram. Both have the same subtle earthy and minty flavors as thyme.  
  • Serving a Vegetarian? - If you do not have chicken broth, water is an acceptable substitute; in fact, water may provide you with a better-tasting result. Also, replacing the chicken broth with water makes this a great dish for vegetarians or those on a low-sodium diet.
